Ham & Veggie Soup
Ingredients:
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 6 cups vegetable broth
- 1 15-oz can peas, drained
- 1 15-oz can lima beans, drained
- 1 15-oz can sweet corn, drained
- 16 oz package fully cooked diced or cubed ham
- Salt and pepper to taste
Directions:
Start by heating the olive oil in a large pot over medium heat. Once hot, toss in the diced onions, carrots, celery, and minced garlic, letting them sauté until the onions turn soft and fragrant.
